Pancakes


Ingredients


1 tsp baking powder

3 tbsp S.R. flour

2 tbsp caster sugar

1 egg

2 tbsp corn oil

4 tbsp milk


Method

Rich Fruit Cake


Cooking time 5-6 hours

Temperature 160C/325F/Gas mark 3 for 1 hour, 140C/275F/Gas mark 1 for 4-5 hours



Ingredients


300g (12oz) butter or margarine

300g (12oz) soft brown sugar

6 eggs (size 3)

400g (1lb) plain flour

Pinch salt

1kg (2.5lb) Asda dried mixed fruit

50g (2oz) glace cherries

100g (4oz) blanched almonds (chopped)

2.5ml (0.5tsp) mixed spice

30ml (2tbsp) black treacle



Method


1. Grease and line well a 22.5 (9") round cake tin.

2. Cream the butter and sugar until light and fluffy. Beat in the eggs gradually, adding a spoonful of flour to prevent the mixture curdling if necessary.

3. Fold in the remaining flour, salt, Asda dried mixed fruit, cherries, nuts, spice and treacle.

4. Transfer the mixture to the prepared tin, smooth the surface and bake for 1 hour at 160C/325F/Gas mark 3, and then 4-5 hours at 140C/275F/Gas mark 1. Cover with grease proof paper to prevent the surface burning if necessary. The cake will be cooked when a skewer placed in the centre of the cake comes out clean. Allow to cool in the tin.

5. Use immediately or wrap tightly in cling film, allow to mature for 1 month. Cover with almond paste and royal icing for a special occasion cake.


Use either metric or imperial measures throughout. Both work well but are not exactly the same.




DUMPLING (Microwave)


Ingredients


8 oz plain flour 1 tsp mixed spice

5 (8) oz margarine 1 tsp cinnamon

6 oz soft brown sugar 1 tsp bicarb. of soda

6 oz sultanas 1 tbsp treacle / Golden Syrup

6 oz raisins 2 beaten eggs

3/8 pt water



Method


  1. Put water in pan.

  2. Add margarine, fruit, sugar, spices, treacle.

  3. Bring to boil & simmer for 1 minute.

  4. Add flour & bicarb. soda.

  5. Take pan off heat & add beaten eggs.

  6. Put mixture in a suitable bowl lined with cling film. Do not cover mixture.

  7. Microwave on full power for 9 minutes.

  8. Preheat oven to GM 8.

  9. Remove from bowl onto plate & put in oven for 5 minutes then GM 5 for a further 5.

  10. Turn off oven & leave to cool.



DUMPLING (Real)


Ingredients


8 oz flour 1 tsp mixed spice

2 oz breadcrumbs ¾ tsp baking soda

4 oz suet pinch salt

2 oz brown sugar 1 tbsp syrup

currants 1 egg

raisins buttermilk

apple

carrot

etc



Method


  1. Mix dry ingredients. Add fruit.

  2. Well in centre - egg, milk

  3. Make dough of medium consistency.

  4. Grease bowl. Allow for mixture swelling.

  5. Cover with greased paper.

  6. Steam for 4 hrs or in pressure cooker for 20 mins then 1 hr on pressure.
